Vegan Mushrooms-Truffle Pizza


Ingredients for 3 Pizzas:
- 250-300 g Organic Spelt flour (Type 700 + Organic Wholegrain Spelt flour(
- 1/2 package Organic life yeast block (1/2 from 42 g)
- 3/4 teaspoon salt
- 1 clove of garlic
- 2-3 Tablespoons Truffle olive oil
- 2/4 cup warm water

For the Topping:
- Vegan yogurt
- 1 clove of garlic
- Truffle olive oil
- 1pc salt
- Organic Vegan cheese of your choice
- Organic Mushrooms of your choice
- Oregano
- Truffle oil

- It is recommend preheating your oven to 250 C at this point so that it will have reached temperature once your pizza is ready to bake.
- Combine 2/4 cup warm water yeast, salt, grated garlic and Truffle oi in a large bowl. Use a wooden spoon to stir very well.
- Gradually add a sifted : 1 cup (125g) of fine Spelt flour +1 cup Wholegrain Spelt flour (125g) Add any additional flour if needed , stirring until the dough is forming into a cohesive, elastic ball and is beginning to pull away from the sides of the bowl. The dough will still be fluffy and slightly sticky but still should be manageable with your hands.
- Lightly dust your hands with flour and devide the dough on 3 for 3 Pizzas. Tansfer each ball to a lightly floured surface and knead briefly until smooth (about 3-5 times). Use a rolling pin to work the dough into a circle.
- Transfer dough to a parchment paper lined pizza pan. Grease with the mixture of Vegan yogurt, garlic, truffle oil and salt. Spread the topping of shredded Vegan cheese , then the finely sliced mushrooms and Oregano.
- Fold the edges over to form a crust.
- Bake until lightly flushed
- Drizzle additional Truffles olive oil as soon as it is removed from the oven. Cut into 8 pieces with a round pizza cutter and serve immediately.
